Odisha Famous Chicken Curry 


Today I am going to share secret recipe about how to prepare chicken curry which Odia people prepare. This chicken curry is otherwise called as " Chicken Tarkari " which we call " Aainsa Tarkari "


Odisha chicken curry is very different from rest chicken curry in the way we don't use too much oil nor use any kind of coconut products or coconut oil to prepare. Chicken curry is different in the sense we Odia people use masala and other ingredients which I am going to explain down.

Ingredients Required :




In Odisha we prepare Chicken curry in two different style :
1) Chicken curry along with potato or 2) Simple Chicken Curry 

Now the one I am going to share is the 1st one. Let me share the ingredients along with other things needed to prepare the curry. This is for two person, hence I have taken 500gm fresh chicken.

  • 500 gm fresh chicken - Wash it properly so that unwanted things get removed
  • 3-4 Potatoes - Cut each potato into 4 pieces 
  • Green chilly - chop down the green chilly as per the above image
  • 2-3 Onions and chop down into small square pieces 
  • 3 Medium size tomatoes and chop down into small-small pieces so that while preparing the curry, it will get mixed up easily, saving time.
  • 2 pinch sugar
  • 2 spoon full of chicken powder/meat powder
  • 2 spoon full of turmeric powder 
  • 3 spoon full of salt
  • 1-2 spoon full of red chilli powder
  • 1 small ginger-garlic paste 
Step 1 : Preparing or we call it Chicken first stage operation. 





Here fresh washed chicken is well mixed with 2 spoon of mustard oil+ 2 spoon full of salt + 1-2 spoon full of turmeric powder. 

It is then kept for 1/2 hour so that everything get well mixed.

Step 2:  Second Stage Operation 



  • Switch on your gas/stove and put the curry pan and heat it.
  • Pour 3-4 spoon full of mustard oil and let it for heating 
  • Add 1/2  spoon ( or may be 2 pinch ) of sugar in the heating oil and stir it uniformly so that sugar get well mixed and you will see a reddish brown colour.
  • Add the chopped onions , green chillies and fry for some time. Add 1 spoon full of salt and fry till onion get golden brownish colour.
  • Add ginger-garlic paste and mixed it well with the fried onion. Fry for some 5 minutes till you get ginger-garlic fry smell
  • Once you see ginger-garlic has well mixed and fried with onion-chillies, add 2 spoon full of turmeric powder, 2 spoon full of red chilli powder, 2-3 spoon full of chicken masala( powder) if you don't have chicken powder, you can also use meat masala with same quantity.
  • Fry the above for 1-2 minute till everything get well mixed.
  • Now add chopped tomato pieces and mixed it well. Add 1 spoon of salt so that it gets quickly mixed. You have noticed I am adding little-little salt in every part. this helps in completing the curry in a uniform manner.





  • Once you get a complete paste ready with tomato, you can either add little water to increase the paste quantity.
  • Add chopped potatoes in the paste




    • Fry potato with the gravy till you see potato got soft and gravy has well mixed
    • Add the chicken ( which is left to mixed with oil, turmeric powder and salt )
    • As you can see in the above pic, chicken is then keep fried with the prepared gravy along with potato and it is continued till we see complete water has been drained out from chicken and you can see the masala, potato and chicken is seen mixed well.
    • Now you have two choice how you want to have this curry either you can prepare this without water and keep frying chicken with gravy till potato is cooked properly. Or second is mixed it with enough amount of water and prepare the one which I did.

    Why Potato is added ?

    Potato is added as per your taste as I told earlier and it is also added so that while cooking we can easily calculate if chicken is well cooked or not.



    After adding enough water as per your requirement, cover the pan with a plate and let it for 10-15 minutes for cooking.

    Once you find potato is fully cooked and it is soft, its sign that our chicken is ready. Add corriander leaves pieces. This gives extra aroma to your chicken curry.

    Now your chicken is ready and you can serve to your family members, friends and enjoy the taste.

    Here in Odisa we call juice as "Pana" and Bela ( Fruit from bel tree ) Panna ( Juice) hence it is called as Bela Pana. As per Odisha culture it is offered as Prasad or Naibedya to Lord Jagganath as prasad or summer juice. 


    This is one of the healthy and natural juice.Therefore it is also know as hunger killer juice.Especially during Pana Sankranti, Odia families prepare this delicious and healthy juice at home and serve to their family members.


    Lets know see how to prepare Odisha most favorite healthy and popular Bela Pana juice. 


    Ingredients and preparation for Bela Pana :



    1. Ripe Bela fruits 
    2. 1/2 teaspoon Black pepper 
    3. 1 cup Grated coconut 
    4. 1/2 cup Banana peeled and mashed 
    5. 1/2 cup Beshan Bundi ( sweets) 
    6. Handful of cashew nut and raisin Sugar as per your taste
    7. Water 1 litre
    8. Some ice cubes 
    Preparation Method:

    Soak the bela fruit in 1litre water for two hours. After two hour with a spoon remove the pulp from bela. Mash the pealed banana and sugar together. Mix it in the prepared  bela juice. Add crashed black pepper in the bela juice. Add grated coconut and ice cube in it.. 



    Your Bela Pana juice is ready and its time to serve your family member. Remember before serving don't forget to garnish the juice with  sweet beshan bundi and cashew, raisin.

    How to prepare Odisha Famous Dosa ? 


    Ingredients:

    1. Arua Chaula( Rice) -500gm
    2. Nadia(Coconut white) – 1 whole
    3.  Salt- as per taste
    4. Refined Oil – as required

    Preparation Step :

    1. Soak the rice in water for 1 hr. 
    2. Grate the coconut white almost into powder
    3. Make a fine paste of coconut and rice. Add salt and leave it for 1 hr.
    4. Add water to make a thin batter out of it.
    5. Heat oil in a tawa/oil fry pan
    6. pour some batter into it, and cover it.
    7. After sometime remove from flame (the upper portion should be
    8. Cooked, don’t turn it). 
    9. Serve hot with boiled milk, dalma or any spicy curry.

    Odisha famous food "56 Bhog" also known as chappan Bhog.This is most commonly known as Mahaprasad. 
    Yes this is food but you cannot tell or spell out this as food. This is special food which get prepared in Jaganath Temple and first gets serve to all 3 almighty : Brother Balaram, Lord Jagannath and sister Subhadra.



    Soon after this Mahaprasad served to Maa Bimala in the Grand Temple(Sri-Mandir)is known as 'Mahaprasad'.

    Mahaprasad which consist of 56 items are classified into two types :

    • Sunkudi Mahaprasad : This consists of items rice, daal, mixed rice, saaga bhaja, khatta, mixed curries, sweet daal
    • Sukhila Mahaprasad : Dry sweets. This is also known as Nirmalaya ( dry boiled rice ) i.e. dala khichidi.

    After serving this food. It straightly goes to Anand Bazar where everyone poor, rich and brahmin purchase and share.

    Interesting Facts About Mahaprasad : 

    • The Jagannath Temple in Puri, Odisha, is one of the  biggest kitchens in India.
    • As per the source it is believed around 500 cooks and 300 helping hands prepare 100 different offerings known as Mahaprasad or Abhada for Lord Jagannath, which are served to the Deity six times a day.
    • There are approximately 245 cooking chulaas ( burners).
    • Items are prepared in mud big-big mud pots ( placing one above the other). 
    • The pot on top get first cooked followed by another down..hence the lowest one get cooked at last only. This is secret and no one knows the reason behind it.  
    • If you share your Mahaprasad with others, God becomes more happier. This prasad should be shared with every people coming to you starting from Beggar to rich people. 
    • If one visit Ananad Bazar, one will see a different scene there , beggars , priests , rich, middle class everyone will be sharing same food to each other. This is the real reason. 
    • It is also said , Maa Lakhsmi said : " who ever comes to Anand Bazar and eat this Mahaprasad should share and eat. There should not be any discrimination in cast, category and also one should not wash their hands after having this Mahaprasad rather they should hover both hands on their heads , sign of prayer to almighty"

    How To Prepare Odisha Famous Traditional Fried Prawn Recipe !

    Chingudi Patra Podda is well know recipe in Odisha. One can easily see this delicious recipe in villages,families living near sea beaches of Odisha and has now it has become so famous that most of restaurants and hotels in Odisha started serving this recipe to the travelers.

    This is also known as Chingudi( Prawn) Podda bajja and since it is prepared using pumpkin leaves  
    (Kakharu Patra ).

    This recipe has been shared by our one of visitor  Bijayananda Satapathy

    Steps are :
      1 .First ready with pumpkin fresh green leaves, wash it with water


      2. Wash your prawns and keep in a bowl type container

      3. Use 2 pumpkin leaves(kakharu leaves )  and put washed prawns



      4. Wrap the above tightly with leaf strips and add salt(1 pinch), turmeric powder( 1 pinch ), little red-chilli powder, tomato pieces and if possible you can add 2-3 green chili ;)



      5. Put the wrapped item over burning gas or stove, you have and cover with a steel container so that it will get cooked with the steam and gas, generated.

      Let the things be there for 10-15 minutes till you fee it is over. 

      Take out the burned wrapped item from the burner and place it on your plate.

      Recipe is ready !! Serve your family member and enjoy the most delicious prawn recipe of Odisha .

      Chhatu Pithou Bhaja

      Chhatu also known as Mushroom is mixed with rice with special way to prepare a food known as ' Chhatu Pithou Bhaja '

      Ingredients Require :

      • Rice
      • Raw Garlic
      • Ginger
      • Dry Red Chilli
      • Mushrooms
      • Onion
      • Green Chilli
      • Turmeric
      • Salt
      • Red chilli powder
      • Refine Oil

      Preparation Process :
      Step 1 Preparing a thick batter :
      Grind soaked rice 2 cup, cumin 1 tsp, garlic 10 / 12 cloves, ginger 1 inch, dry red chilli 4 / 5 ) 
      Step 2 : mix washed and properly squeezed chopped mushrooms, onion, green chilli, coriander, turmeric, salt and red chilli powder according to your taste. 
      Step 3 :Mix it. In a pan add refined oil and put a small portion of mixture n flatten it. 
      Step 4 :Cook both sides in simmer flame.

      Hence your Chhatu Pithou Bhaja is ready to server :)

      How To Prepare Chips With Pumpkin Flowers ?

      The large yellow blossoms produced by pumpkin plants are also well known for recipes and its famous especially in countries like America, India and some northern part of Europe countries.
      Many food bloggers have described this yellow flower as  "The Edible Flower "
      Pumpkin blossoms can be boiled and served as soup, even with egg,  pasta or salad recipes and many more.
      The most interesting and favorite way which every member of your family will like is to fry it and serve with tomato or chilli sauce.
      You can easily grow in your back yard and use them any time you want. Mostly in India, women will cook with deep fry and that is what is our recipe name.
      Now let us get into business and prepare our Pumpkin flower chips which is also known as 
      " Kaddu Pakoda "

      Things Needed to prepare :

      • Washed Pumpkin blossoms 
      • Refine Oil -  For frying pumpkin blossoms
      • Salt - One cup of salt - Based on the no. of washed pumpkins you will be frying.
      • Rice powder - This will make your chips crispy and crunchy 
      • Gram flour - For making paste which will be used in deeping washed Pumpkins
      • Turmeric & Red chilli powder - To add colour to your chips 

      Preparation Process :
      1. Bring a bowl and add gram flour , rice powder (1/2 of gram flour ) , one spoon of salt , red chilly powder ( 1/2 spoon), add 1/2 spoon of turmeric powder. 
      2. Prepare gram flour paste on a bowl so that every pumpkin can be deeped. Paste must be thick.
      3. Add 1/2 amount of rice powder in the paste and mix it well so that paste is well prepared.
      4. Now deep pumpkins such a way every pumpkin is well covered with thick paste 
      5. Put a frying pan on gas/fire and let it be for hot for some time and add good amount of refine oil/sun flower oil or any oil which you are using for frying.
      6. Once the oil is getting hot , start putting pumpkins from the paste bowl and deep in the oil pan.
      7. Leave the pumpkins for 5 min till there is brownish-golden colour appearance.
      8. Now flip all pumpkins to other side so that every side is well fried.
      9. Once pumpkins looks brownish-golden from all over , took out them on a plate
      10. Now its time to serve the fried pumpkins to your waiting members with good presentation ;)
      11. Add chilly sauce and tomato sauce on the presentation which will increase the hunger ;)
