How To Prepare Odisha Most Popular Fish Curry "Machha Besara "

Typical Odia fish dish popularly known as " Machha Besara " . It is mainly cooked in mustard sauce and very healthy curry for everyone. 

Odisha non-veg curry is very different from rest places non-veg items because of its simplicity and masala beign used while preparing. 

Today we are going to see how one can easily prepare this most popular fish curry. 












Ingredients Required : 

  • Fish – Rohu or cat fish (2 lb thin steak pieces)
  • Onion – 1 big sliced
  • Tomatoes – 2 Medium diced
  • Potatoes – 1 medium sliced (optional)
  • Mustard seeds – 50 gms about 10tbsp soaked in water for 2-3 hrs
  • Garlic – 3 cloves, Ginger – 1 inch
  • Red chilli powder – 1 tsp, Tumeric powder – 1/2 tsp
  • Salt to taste, Water – 1 1/2 cup
  • Oil – about 10 tbsp
  • Dried Mango – Ambula(2) or curd (1/4 cup)
  • Coriander leaves to garnish
Preparation Steps : 


  1. Grind mustard seeds, ginger and garlic together to a fine paste and keep asid
  2. Wash the fish properly and marinate for 10 mins with 1/2 tsp chilli, pinch of turmeric and pinch of salt
  3. Put 3 tbsp of oil in a frying pan in medium heat, and fry the fish until you see gold brown on each side. 
  4. Put oil  in a separate deep bottom wide pan and heat to medium level
  5. Add sliced onion, fry until onion turned to golden colour
  6. Once you see onion turned to golden colour, add cut potatoes and tomatoes and fry it for 3-4 minutes
  7. Add turmeric, salt and chilli powder
  8. As I have mentioned in my earlier recipes also, always keep make sure onion is properly fired and not burnt. 
  9. Start adding blended mustard paste and mixed with the above frying items properly for for 5 minutes until the paste sticks to the pan and oil gets separated. 
  10. Add water and cover the pan for the water to simmer
  11. Add curd or Ambula ( dried and salted mango )  and let it simmer for 2-3 minutes.
  12. Add fish to the pan without overcrowding, lay the fish flat in the pan.
  13. Cover the pan and let it boil for 5 mins then turn the fish to cook on the other side.

Now your dish is ready to serve !!! You can add coriander leaves and serve your family, families.

Complete Steps To Prepare Odisha Crab Curry

You must have tasted crab recipes in different places and must have got the different taste ideas and procedures how to prepare. If you haven’t tasted Odisha famous non-veg crab curry then why not prepare it now and serve to your family and friends !!?

Well to prepare typical Odia crab curry, you first need to understand the balance of masala Odia people use in their recipes. Let me share you the complete procedures with list of steps to prepare it.

Raw Ingredients

• Fresh crabs as per your requirements

• 2 tbsp. mustard oil

• 2 tsp. turmeric powder

• 1 teaspoon salt

Marinate the cleaned crabs with above and let it for 15-20 min so that whole ingredients get inside the crabs.

Now it's time to prepare the curry for this we need below ingredients :

For the Masala preparation we need

• 2-3 large onion

• 1 medium sized tomato

• 5-6 large garlic pods

• 1 inch ginger

• 2-3 dried red chillies

• 1 tsp. cumin seeds

• 1 tsp, black peppercorns

• 2 tsp. mustard seeds

• 1 tbsp. coriander seeds

• 1 tsp. poppy seeds

• 3-4 cloves

• Cinnamon (1 inch)

Take a pan and dry roast dried red chillies, cumin seeds, black peppercorns, mustard seeds coriander seeds, cloves and cinnamon till they start to sputter and release their aromas.

Now in a grinder jar take sliced onions, tomato, garlic pods, ginger, poppy seeds and all the dry masalas and grind to a fine paste.

For the curry we need

• 1 tsp panchfootana

• 1 bay leaf

• 1 tsp garam masala

• 2 cups of hot water

• Mustard oil

• Salt to taste

Preparation :

1. Take about 4 tablespoons of mustard oil in a wok and heat till it reaches the smoking point and add the marinated crab meat. Stir-fry for 5 minutes till the crab changes colour. Remove from the crabs and keep aside.

2. In the same pan stir-fry the thickly sliced potatoes and keep aside.

3. Add bay leaves to the remaining oil, add bay leaves and panchfootana and let them sputter. Add the ground masala paste and stir-fry on a medium flame till the masala leaves oil.

4. Once the masala is fully cooked and the raw smell is gone add the fried crabs and stir-fry another 3-4 minutes.

5. Add the fried potatoes and then add 2 cups of water. Mix it all nicely and reduce the heat to low, adjust the salt, cover it and let it simmer for about 10 minutes or until it is done.

You can either keep the gravy either thick or thin as per your choice.

Once you start getting aroma with crabs smell, sprinkle the garam masala and garnish it with chopped fresh coriander.

Now our special crabs recipe is ready to be served.
