How To Prepare Odisha Chicken Curry ?

Odisha Famous Chicken Curry 


Today I am going to share secret recipe about how to prepare chicken curry which Odia people prepare. This chicken curry is otherwise called as " Chicken Tarkari " which we call " Aainsa Tarkari "


Odisha chicken curry is very different from rest chicken curry in the way we don't use too much oil nor use any kind of coconut products or coconut oil to prepare. Chicken curry is different in the sense we Odia people use masala and other ingredients which I am going to explain down.

Ingredients Required :




In Odisha we prepare Chicken curry in two different style :
1) Chicken curry along with potato or 2) Simple Chicken Curry 

Now the one I am going to share is the 1st one. Let me share the ingredients along with other things needed to prepare the curry. This is for two person, hence I have taken 500gm fresh chicken.

  • 500 gm fresh chicken - Wash it properly so that unwanted things get removed
  • 3-4 Potatoes - Cut each potato into 4 pieces 
  • Green chilly - chop down the green chilly as per the above image
  • 2-3 Onions and chop down into small square pieces 
  • 3 Medium size tomatoes and chop down into small-small pieces so that while preparing the curry, it will get mixed up easily, saving time.
  • 2 pinch sugar
  • 2 spoon full of chicken powder/meat powder
  • 2 spoon full of turmeric powder 
  • 3 spoon full of salt
  • 1-2 spoon full of red chilli powder
  • 1 small ginger-garlic paste 
Step 1 : Preparing or we call it Chicken first stage operation. 





Here fresh washed chicken is well mixed with 2 spoon of mustard oil+ 2 spoon full of salt + 1-2 spoon full of turmeric powder. 

It is then kept for 1/2 hour so that everything get well mixed.

Step 2:  Second Stage Operation 



  • Switch on your gas/stove and put the curry pan and heat it.
  • Pour 3-4 spoon full of mustard oil and let it for heating 
  • Add 1/2  spoon ( or may be 2 pinch ) of sugar in the heating oil and stir it uniformly so that sugar get well mixed and you will see a reddish brown colour.
  • Add the chopped onions , green chillies and fry for some time. Add 1 spoon full of salt and fry till onion get golden brownish colour.
  • Add ginger-garlic paste and mixed it well with the fried onion. Fry for some 5 minutes till you get ginger-garlic fry smell
  • Once you see ginger-garlic has well mixed and fried with onion-chillies, add 2 spoon full of turmeric powder, 2 spoon full of red chilli powder, 2-3 spoon full of chicken masala( powder) if you don't have chicken powder, you can also use meat masala with same quantity.
  • Fry the above for 1-2 minute till everything get well mixed.
  • Now add chopped tomato pieces and mixed it well. Add 1 spoon of salt so that it gets quickly mixed. You have noticed I am adding little-little salt in every part. this helps in completing the curry in a uniform manner.





  • Once you get a complete paste ready with tomato, you can either add little water to increase the paste quantity.
  • Add chopped potatoes in the paste




    • Fry potato with the gravy till you see potato got soft and gravy has well mixed
    • Add the chicken ( which is left to mixed with oil, turmeric powder and salt )
    • As you can see in the above pic, chicken is then keep fried with the prepared gravy along with potato and it is continued till we see complete water has been drained out from chicken and you can see the masala, potato and chicken is seen mixed well.
    • Now you have two choice how you want to have this curry either you can prepare this without water and keep frying chicken with gravy till potato is cooked properly. Or second is mixed it with enough amount of water and prepare the one which I did.

    Why Potato is added ?

    Potato is added as per your taste as I told earlier and it is also added so that while cooking we can easily calculate if chicken is well cooked or not.



    After adding enough water as per your requirement, cover the pan with a plate and let it for 10-15 minutes for cooking.

    Once you find potato is fully cooked and it is soft, its sign that our chicken is ready. Add corriander leaves pieces. This gives extra aroma to your chicken curry.

    Now your chicken is ready and you can serve to your family members, friends and enjoy the taste.
