Benefits of Mung Dal :
- High source of proteins, fiber, antioxidants and phytonutrients
- Mung beans are a high source of nutrients including: manganese, potassium, magnesium, folate, copper, zinc and various B vitamins.
- Resistant starch and dietary fiber.
- Useful in defending against several chronic, age-related diseases eg. heart disease, cancer, diabetes and obesity.
Ingredients Needed :
- Take 2 cup of mug dal
- Half cup chopped onion
- 2-3 green well chopped chillies
- Salt as per the taste
- Refine oil - 2-3 tea spoon full
- Potatoes - 2-3 which can increase as per the no. of members
- Curry masala - 1 tea spoon full
- Tomatoes - chopped ( 1-2 tomatoes )
- 1/2 tea spoon full turmeric powder
- 1/2 tea spoon full coriander powder
- 1/2 tea spoon full jeera
Preparation Steps :
- Put fry pan and fry the mug dal ( well cleaned with water) till it become dry and brownish.
- Now put curry pan on the burner and let it heat it with some amount of refine oil.
- Add chopped onions, green chilli, jeera and fry till onion gets into brownish colour.
- Add turmeric powder and fry for 1 min till it get turn brownish yellow or golden yellow.
Remember : Never put everything because turmeric powder, coriander , curry masala all need to fry little so that they well mixed with the curry.
- Add fried mug dal and potato pieces. Fry them till potatoes become little brown and soft.
- Add chopped tomato pieces mixed well. Add salt as per the requirement and let it heat for 10-15 minutes till tomatoes get well mixed.
- Add water till everything get filled and water lever over the fried curry.
- Now let the curry to boiled for 1/2 hour so that everything get well cooked.
- Once you see potatoes totally soft, this indicates your curry is almost ready.
- Add 1 tea spoon full of masala curry and let it cooked for 10-15 minutes.
- Stop the burner and your Mug Dal Curry is ready.
